I probably don’t have to convince you that matcha is one of the most delicious teas to blow up over the last decade. Those gorgeous green, foamy drinks on Instagram not only look gorgeous but taste like a creamy version of your favorite flavor of tea, while giving you a buzz that, unlike coffee, gives you a nice, clean buzz. None of that feeling jittery and loquita all morning because you had too many espressos.

If you don’t already know, matcha is finely cut powder made out of green tea. Its origins are fascinating: it can be traced back to Japanese tea ceremonies from the 12th century. In fact, this for of powder milling originated in China in the 10th century. The most powerful matcha comes from Japan, specifically in Uji, Nishio, Shizuoka, and Kyushu. The powder is stirred and infused with hot water, essentially creating a matcha concentrate that resemble very light, thin, sopa. To make a latte, you add this green concentrate into your favorite type of milk. You can find many authentic, original matcha blends in Japan.

Holy Matcha

This one isn’t a recipe, but a Latina matcha entrepreneur. Geraldine Ridaura Schumacher is the entrepreneur behind the shop Holy Matcha in San Diego, which offers things like matcha latte, matcha lemonade, avocado toast, and more. While they’re currently not yet fully open, they are taking to-go orders. Given that I now live nearby, I’ll likely make my way there very soon!

Casita Linda’s Matcha Conchas

Linda Barragan – originally from Guanajuato, Mexico – is the owner of Casita Linda Mexican cafe in Maryland. Her Matcha Conchas (over at Mexico in my Pocket) are a green tea lover’s dream, made with evaporated milk and matcha powder. It may take you a bit, but, let’s face it – it’s worth it.
