3 Springtime Breakfast Ideas By Our Favorite Latina Foodies

Spring is here, which to me usually means a shift from warm, thick, goopy breakfast that makes you feel cozy in chilly weather, to colorful, refreshing, and protein-and-veggie-based dishes in the morning that help energize your day. Sundays are a special day for me because that’s when I meal prep for the week or search instagram for delicious recipes that will create special morning treats.

Lola Dweck’s Easy Breakfast Tostadas

A breaktast without avocado and huevos is not a proper breakfast, and usually leads to getting hungry too early in the day. Lola Dweck’s “Easy Breakfast Tostadas,” at Lola’s Cocina has all of the protein and fat that you need to feel good until lunch: Eggs, beans, and avocado atop a crunchy tostada instead of your usual tortilla. Plus it’s incredibly easy to make.

Vanessa Mota’s Creamy Mango Banana Smoothie

There is nothing more refreshing than a creamy sweet protein-based drink to power up your morning. This smoothie is a particularly great drink because of its probiotic qualities, and it really will remind you of a desert you used to have at your abuela’s house. Vanessa’s recipes are inspired by her Dominican background. Her photos will leave you hungry and running to the kitchen to meal prep right now.

Coco Verde Vegan’s Homemade Granola

I have never made granola but have always wanted to try it. Bars make a particularly great breakfast because they are easy to eat – and when you are home in the morning with the baby you need all the time hacks you can get. This bar looks like it would be filling enough until lunchtime (maybe add a hard boiled egg or two). This recipe belongs to Cecilia Flores at Coco Verde Vegan, who adds a delightful and fun vegan twist to delicious Latinx cuisine.
