If you have always wanted to start a garden but were overwhelmed, you’ll be pleasantly surprised at the options that you have without having to spend too much time planning or thinking about it. You can have some greens, luscious and ready to eat in just a few weeks.
Microgreens were my favorite things to grow this past year. They are basically tiny versions of your favorite greens – mini broccolis, mini radishes, mini anything. They are kind of in the toddler stage of seed germination – right when the seeds have sprouted.

They are Mini Vitamin Powerhouses
Microgreens pack a bigger vitamin punch than their larger counterparts – loads of vitamin C and carotenoids, for example. That way, you can get the same amount of goodness from a smaller bunch of veggies.
They Grow Really Fast
From the time that you plant them to when they are ready for you to eat takes anywhere from 2 to 3 seeks. Forget having to wait until next season to harvest your delicious salads and wraps. Plant this weekend and you’ll be munching on delicious greens by the end of the month.
You Don’t Need Much
All you really need to grow microgreens are a tray (you can find one on Amazon), seeds, and dirt. No need to build elaborate boxes in the yard or buy multiple pots.
You Can Grow Any of Your Faves
Arugula, broccoli, mustard, spinach, kale, peas, you can pretty much grow mini versions of any of your favorite beans and greens. A recent batch we grew here at home had a spicy, mustardy-taste, just like its grown up version.
You Can Add to Everything
Seriously, they are delicious and perfect for a hearty wrap (put a tortilla on it!), or a veggie con hummus sandwich. Key is you have to have really good salsa. Try Tahini, stone ground mustard, Sriracha con mayo, really anything. Microgreens allow you to get creative.
